- 1,8 kg őzcomb
a páchoz:
- 300 g sárgarépa
- 300 g petrezselyem gyökér
- 300 g zeller
- 100 g karalábé
- 3 db közepes vöröshagyma
- 6 nagy gerezd fokhagyma
- 2 ek. szemes bors
- 1 ek. borókabogyó
- 8 db babérlevél
- 1 citrom frissen facsart leve
sütéshez:
- 16 gerezd fokhagyma
- 20 dkg füstölt mangalica szalonna
- só
- bors
- őrölt rozmaring
- 12 ek. zsír
ELKÉSZÍTÉS
A páchoz való zöldségeket megtisztítjuk, megmossuk, majd vastagabb karikára / nagyobb kockára vágjuk, a vöröshagymát negyedeljük és edénybe tesszük. Hozzáadjuk a zúzott fokhagymát, a citrom levét, a fűszereket (bors, boróka, babér) és kb. 1,5 liter vízzel öntjük fel.
20 percig főzzük, majd kihűtjük. Ha hidegre hűlt, ráöntjük a két darabbal lévő őzcombra úgy, hogy azt mindenhol teljesen ellepje. Az edényt alufóliával fedjük és a húst ebben a pácban 2-3 napig érleljük, szigorúan hűtőben tartva. Félidőben átforgathatjuk a húsokat, hogy mindenhol egyformán átjárják az ízek.
(Érdemes a pácolási fázist beiktatni, mert a húst nagyon jól puhítja és remekül ízesíti is.)
Kivesszük a pácból a húst, papírtörlőn leszárogatjuk. A húsok mindkét oldalát gazdagon megtűzdeljük fokhagyma gerezdekkel és szalonna csíkokkal. A hús mindkét felét sózzuk, borsozzuk, bőven meghintjük őrölt rozmaringgal, majd tepsibe fektetjük. (Vadhús esetén a fűszerezés lehet kicsit bátrabb, erőteljesebb, mint általában.)
Ha marad szalonnacsík és fokhagyma, azt a húsok tetejére szórjuk.
A húst meglocsoljuk 12 ek. olvasztott zsírral. A tepsit alufóliával fedjük és előmelegített sütőben kb. 1,5-2 óra alatt közepes tűznél puhára sütjük. (A sütési idő függ az őz korától.) Félidőben megfordítjuk a húst.
Amikor a hús már puha, levesszük az alufóliát és még néhány percre visszatoljuk a sütőbe, hogy szép piros színt kapjon. Ízlés szerinti körettel tálaljuk. Jól illik hozzá a burgonyapüré vagy a hagymás törtburgonya, amit a sült szaftjával meglocsolhatunk.
