- 1,8 kg őzcomb
a páchoz:
- 300 g sárgarépa
- 300 g petrezselyem gyökér
- 300 g zeller
- 100 g karalábé
- 3 db közepes vöröshagyma

- 2 ek. szemes bors
- 1 ek. borókabogyó
- 8 db babérlevél
- 1 citrom frissen facsart leve
sütéshez:
- 16 gerezd fokhagyma
- 20 dkg füstölt mangalica szalonna
- só
- bors
- őrölt rozmaring
- 12 ek. zsír
ELKÉSZÍTÉS
A páchoz való zöldségeket megtisztítjuk, megmossuk, majd vastagabb karikára / nagyobb kockára vágjuk, a vöröshagymát negyedeljük és edénybe tesszük. Hozzáadjuk a zúzott fokhagymát, a citrom levét, a fűszereket (bors, boróka, babér) és kb. 1,5 liter vízzel öntjük fel.

A húst meglocsoljuk 12 ek. olvasztott zsírral. A tepsit alufóliával fedjük és előmelegített sütőben kb. 1,5-2 óra alatt közepes tűznél puhára sütjük. (A sütési idő függ az őz korától.) Félidőben megfordítjuk a húst.
